Gina makes lasagna

Ingredients:

Fresh Pasta:

  • 6 cups (768 g) All Purpose Unbleached Flour [Cup to gram conversions table]
  • 1 cup Semolina Flour
  • 8 extra large Eggs
  • 1 Tbsp Salt mixed with 1 Tbsp Water

Ricotta Mixture:

  • 910 g Whole Milk Ricotta
  • ½ cup grated Pecorino Romano Cheese
  • 1 cup shredded Whole Milk Mozzarella
  • ¼ cup chopped fresh Parsley
  • 2 extra large Eggs

Assembling Lasagna Tray:

  • Fresh Pasta
  • Crushed Meatballs (approx 8-10/layer)
  • Sauce/Gravy
  • Grated Pecorino Romano Cheese
  • Shredded Whole Milk Mozzarella Ricotta Mixture or chopped boiled Egg (1/layer)
